This Hamburger Potato Soup is creamy, cheesy, and packed with hearty flavors! Made with savory ground beef, tender potatoes, and a rich, comforting broth, it’s the perfect one-pot meal for any occasion.

For the Soup Base:

  • 1 lb ground beef (80/20 or leaner)
  • 1 tbsp olive oil or butter
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 4 large potatoes (Russet or Yukon), peeled & diced
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp smoked paprika (optional)
  • 1 tsp salt & black pepper (adjust to taste)

For Creaminess & Flavor:

  • 1 cup heavy cream (or half & half)
  • 1½ cups shredded sharp cheddar cheese
  • 2 tbsp cream cheese (optional, for extra richness)
  • 1 tbsp cornstarch (optional, for thickening)

For Garnishing & Serving:

  • Chopped fresh parsley or green onions
  • Extra shredded cheese
  • Crispy bacon crumbles
  • Crusty bread or biscuits

Instructions

1️⃣ Brown the Ground Beef

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add ground beef and cook until browned and crispy, breaking it apart with a spoon.
  3. Remove excess grease (if needed), leaving about 1 tbsp for flavor.

2️⃣ Build the Flavor Base

  1. Add onions, carrots, and celery to the beef. Sauté for 5 minutes until softened.
  2. Stir in minced garlic and cook for another 30 seconds.

3️⃣ Simmer the Soup

  1. Pour in beef broth and water. Stir well, scraping up browned bits for extra flavor.
  2. Add diced potatoes, Worcestershire sauce, Dijon mustard, smoked paprika, salt, and pepper.
  3. Bring to a boil, then reduce heat and let simmer for 20 minutes, until potatoes are fork-tender.

Notes

For a thicker soup, mash a few potatoes directly in the pot before adding cream!
