  • 1 small onion, diced
  • 1 bell pepper (red or green), sliced
  • 3 cloves garlic, minced
  • 1 tbsp Cajun seasoning (adjust to taste)
  • ½ tsp smoked paprika
  • 1 cup chicken broth
  • 1 can (14 oz) fire-roasted diced tomatoes
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 tbsp butter
  • ½ tsp salt & black pepper (adjust to taste)
  • 2 tbsp chopped parsley (for garnish)

Instructions

1️⃣ Cook the Pasta

  1. Boil water with a pinch of salt.
  2. Cook pasta until al dente (about 1-2 minutes less than the package instructions).
  3. Drain and set aside.

🔥 Pro Tip: Reserve ½ cup of pasta water to thin the sauce if needed!

2️⃣ Sauté the Sausage & Vegetables

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced andouille sausage and cook for 4-5 minutes until browned.
  3. Remove sausage and set aside.
  4. In the same pan, add onions and bell peppers. Sauté for 3 minutes until softened.
  5. Stir in garlic, Cajun seasoning, and smoked paprika. Cook for 30 seconds until fragrant.

🔥 Pro Tip: Let the sausage develop a golden-brown crust for extra smoky flavor!

3️⃣ Build the Creamy Cajun Sauce

  1. Pour in chicken broth and fire-roasted tomatoes. Stir well.
  2. Add heavy cream and butter, stirring until the sauce is smooth.
  3. Let simmer for 5 minutes to thicken slightly.

🔥 Pro Tip: For an ultra-rich sauce, mix in 2 oz of cream cheese!

4️⃣ Combine Everything & Serve

  1. Return sausage to the pan and add cooked pasta.
  2. Stir in Parmesan cheese until melted.
  3. Season with salt and black pepper to taste.
  4. Garnish with fresh parsley and serve hot!
