Ingredients

Scale

For the Fruit Filling:

  • 3 medium apples (Granny Smith or Honeycrisp), peeled & sliced
  • 2 cups chopped rhubarb (fresh or frozen)
  • ⅓ cup brown sugar
  • 2 tbsp maple syrup or honey
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch (or flour, for thickening)
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp vanilla extract

For the Oat Crumble Topping:

  • 1 cup rolled oats
  • ½ cup all-purpose flour (or almond flour for gluten-free version)
  • ½ cup brown sugar
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ cup cold butter, cut into small cubes (or coconut oil for vegan version)
  • ¼ cup chopped pecans or walnuts (optional, for extra crunch)

Instructions

1️⃣ Prepare the Fruit Filling

  1. Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish or a similar-sized ovenproof dish.
  2. In a large bowl, combine apples, rhubarb, brown sugar, maple syrup, lemon juice, cornstarch, cinnamon, nutmeg, and vanilla extract.
  3. Mix well and let sit for 10 minutes to allow the juices to release and thicken slightly.

🔥 Pro Tip: Letting the fruit sit before baking helps develop deeper flavors!

2️⃣ Make the Crumble Topping

  1. In another bowl, mix rolled oats, flour, brown sugar, cinnamon, and salt.
  2. Add cold butter cubes and use your fingers or a pastry cutter to mix until the texture resembles coarse crumbs.
  3. Stir in chopped pecans or walnuts, if using.

🔥 Pro Tip: For an extra crunchy topping, freeze the crumble mixture for 10 minutes before baking!

3️⃣ Assemble & Bake to Golden Perfection

  1. Pour the fruit mixture into the prepared baking dish and spread evenly.
  2. Sprinkle the oat crumble topping evenly over the fruit.
  3. Bake for 35-40 minutes or until the top is golden brown and the fruit is bubbling.

🔥 Pro Tip: For an extra crunchy topping, broil for the last 2-3 minutes!

4️⃣ Serve & Enjoy

  1. Let the crisp cool for 5-10 minutes before serving.
  2. Enjoy warm on its own, or serve with vanilla ice cream, whipped cream, or Greek yogurt.
